If you are trying to eat less carbs, this is the right recipe for you. It’s an easy and healthy way to cut calories and carbohydrates and yet it’s so delicious.
You see, eating healthy does not necessarily means to starve yourself and eat raw vegetables all the time. Just be creative and you can create taste sensations with a couple of ingredients and you will stay lean and fit.
The recipe contains frozen spinach, but of course you can use fresh one instead. Just double the quantity, cook it in a pan over medium heat until it’s soft. When cooked, squeeze the water from the spinach and chop it fine.
Ingredients
- 2 egg whites
- 70 g spinach, frozen
- 50 g tofu, small brunoise or cottage cheese
- 1/4 avocado, small brunoise
- 10 g pine nuts
- 3 radishes, sliced
- 1 tsp balsamic red wine reduction
- 1/2 tsp ground coriander
- 1/2 tsp paprika powder
- 1/4 tsp salt
- 1/4 tsp white pepper
- 2 tsp coconut oil
Preparation
Defrost the spinach in the microwaves. Beat the egg whites with the dry seasonings.
Heat a dry pan over high heat. Roast the pine nuts until golden. Shake the pan continuously so that they do not burn. Transfer to a piece of kitchen paper.
Heat coconut oil in a pan over medium heat. Mix the defrosted spinach and the egg whites. Pour the mixture into the pan. Cook on both sides for 3-4 min.
Cut the tofu, avocado and radishes in small pieces.
Transfer the omelette to a big plate. Cover with tofu, avocado and radishes. Drizzle with balsamic red wine reduction. Toss the half of the pine nuts on top and roll the wrap. Toss the rest of the pine nuts on top. Enjoy!
