Stay healthy and fit with this Four bean salad. It’s full of fiber, protein and magnesium. Beans are so good for your health as they lower the risk of heart diseases and lower the cholesterol. The fiber content will make your blood sugar level rise slowly, so you will feel satistied for a longer time.
- 150 g green beans
- 100 g Garbanzo beans (chickpeas)
- 150 g black beans
- 150 g kidney beans
- 1 red bell pepper, chopped
- 10 g fresh cilantro, minced
for the dressing:
- 2 tbsp extra virgin olive oil
- 1 1/2 tbsp balsamic vinegar
- 1 tbsp agave syrup
- 1/2 tsp salt
- 1/4 tsp white pepper
Heat a pan with a little bit of water on the bottom. Put a steamer on top and add the green beans. Stream for 5 min after the water starts to boil. If you don’t have a steamer, bring pan with water to the boil. Add salt and the green beans. Cook for 3 min.
Cut the bell pepper in half and remove the seeds. Chop the bell pepper in small cubes. Mince the cilantro very fine.
In a big bowl mix kidney beans, black beans, chickpeas and bell pepper. Add the steamed green beans.
Make a dressing of the olive oil, balsamic vinegar, agave syrup, salt and pepper. Pour the dressing over the salad. Enjoy!
