It’s time for a healthy lunch on the go again. The recipe today is an oven-baked omelette with creamy avocado, salty feta and sweet bell pepper. It’s so easy to make, but so full of flavor.
- 3 eggs
- 1 avocado, brunoise
- 150 g feta cheese, cubed
- 2 tbsp almond milk
- 1/2 red bell pepper, brunoise
- 1/4 tsp ground coriander
- 1/4 tsp ground cumin
- 1/4 tsp paprika powder
- 1/4 tsp white pepper
- 1/4 tsp salt
Preheat the oven to 180 degrees C/350 degrees F. Cover a small baking dish with parchment paper or aluminium foil.
Cut the cheese in small cubes. Peel the avocado, remove the seed and cut in big brunoise. Cut the bell pepper in small brunoise. Spread the vegetables and the cheese in the baking dish.
Beat the eggs with the milk using a fork. Add the dried seasonings. Pour the batter over the vegetables.
Bake in the preheated oven for 25 to 30 min or until it’s set. Enjoy!
