I can imagine that there are days when you don’t want to cook for hours. I prepared a recipe exactly for one of those days. It’s super simple and takes only 5 min preparation. The rest is just under a half of hour in the oven.
I’ve tried this recipe as well using chicken breast and it turned out great. The meat or fish is tender and has a lot of flavor from the seasonings and the pesto.
Ingredients
- 300 g pangasius (or other white fish of your choice)
- 30 g pesto Genovese
- 30 g cherry tomatoes
- 30 g black olives, pitted
- 2 tsp Italian seasoning
- 1/2 tsp garlic powder or 2 garlic cloves, sliced
- 1/2 tsp white pepper
- 1/2 tsp salt
Preparation
Preheat the oven to 180 degrees C/350 degrees F.
Take a pieces of foil and place it on a baking tray. Place the fish filet in the middle. Spread 15 g of pesto on top. Season with Italian herbs, salt and pepper.
Slice the garlic cloves. Cut the cherry tomatoes and olives in half. Spread the half of each on top of the fish. Repeat with the other fish fillet.
Fold the edges of the foil so that any liquid could not go out. Place the baking tray in the preheated oven and cook for 25 min. Increase the temperature to 200 degrees C/400 degrees F and switch on only the grill. Grill for 5 more minutes. Enjoy!
