Summer vegetable soup

3-4 servings; 10 min preparation; 20 min cooking time.

Making soup is a great way to incorporate more vegetables in your diet. The dish is so easy to make and you can vary endlessly according to the season and your taste. Well, in order to celebrate summer flavors and colors, I made a delicious colorful and healthy vegetable soup.

Ingredients

  • 1/2 sweet onion, minced
  • 1/2 red bell pepper, brunoise
  • 2 small potatoes, brunoise
  • 80 g carrots, brunoise
  • 80 g sweet peas, frozen
  • 600 ml water
  • 1 vegetable bouillon cube
  • 50 g vermicelli
  • 1/2 tsp ground coriander
  • 1/2 tsp white pepper
  • 1 tbsp mild olive oil


Preparation

Heat oil in a soup pan over medium heat. When hot, add the onions. Saute the onion for 3-4 min, but keep an eye on them so that they don’t burn. Keep stirring.

Add the potatoes and carrots. Saute for 3 more minutes. Then add bell pepper, the water and the bouillon cube.

When the water starts boiling, add the peas and vermicelli. Season with ground coriander and white pepper. Let it simmer for 5 to 10 min or until all vegetables are cooked through. Add some salt if needed. Enjoy!

    It is a great idea to use vermicelli & ground coriander! I would like to incorporate them in my soup!

    1. Vermicelli gives body and a little bit of texture to the soup, so I really like using it
