Avocado quesadillas with goat cheese and peas

2 servings; 10 min preparation; 15 min cooking time.

Today the colour is green! I found these beautiful avocados in the store and couldn’t resist to use them in today’s recipe. So the recipe for today is delicious avocado quesadillas with peas, basil and goat cheese. 

A completely vegetarian and super healthy recipe that you can make for lunch or as a side dish. There is no additional fat from frying or anything unhealthy, so it’s suitable for every diet.


Ingredients

  • 2 tortilla wraps (I used whole grain ones)
  • 80 g sweet peas, frozen
  • 80 g goat cheese, shredded
  • 2 tbsp fresh basil, minced
  • 1 tsp olive oil
  • 1 avocado, mashed
  • 1/2 tsp ground coriander
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1/2 tsp lime juice


Preparation

Run the frozen peas under hot water for a couple of minutes. You can also blanche them if you prefer.

Mash the avocado in a bowl, using a fork. Add ground coriander, salt and pepper. Add the lime juice and mix well.

Glaze the bottom of a pan with olive oil. You can use a piece of kitchen paper. Heat a tortilla wrap over medium heat.

Cover one half of the wrap with goat cheese. Put a layer of the avocado mixture. Sprinkle one half of the sweet peas and minced basil. Finish it with a layer of goat cheese.

Fold the other half of the wrap and press using a small lid or a spatula. Cook until golden brown, then turn the other side.

Repeat the same with the other wrap. Cut both wraps in half. Enjoy!
