Savory sweet potato and feta muffins

If you like muffins, but you are afraid of the calories, don’t worry, I have the right recipe for you. These sweet potato muffins are flourless, low-fat and super delicious. Eating healthy is easier than you might think. 

The salty feta cheese balances perfectly the sweetness of the potatoes and the corn. The fresh cilantro gives a specific fresh taste.

These muffins are the great as a snack or side dish. Your kids will also love them, so they are the perfect way to include veggies in their diet.


Ingredients

  • 2 medium sweet potatoes
  • 100 g feta cheese, small brunoise
  • 100 g corn
  • 10 g fresh cilantro, minced
  • 2 eggs
  • 1 tsp ground nutmeg
  • 1/2 tsp white pepper
  • 1 tsp salt


Preparation

Preheat the oven to 200 degrees C/400 degrees F.

Cut the sweet potatoes in half and wrap each part with the skin on in aluminium foil. Roast the potatoes in the oven for 30 to 40 min until soft.

Take the sweet from the skin and transfer to a big bowl. Add the corn, minced cilantro, eggs and the seasonings. Add the feta cheese and mix well.

Transfer to muffin forms and bake in the preheated to 180 degrees C/360 degrees F oven for 30 to 35 min. Let to cool completely before serving. Enjoy!
