Turkey fillet en papillote

2 servings; 10 min preparation; 30 min cooking time.

Eating lean protein after your workout is the best way to recover your muscles. That’s exactly what I needed yesterday after my heavy training, so I made a simple, easy and fast dish to help me recover. This dish is not only healthy and good for you, but it’s very delicious and is pleasing for the eye as well. 

I’m sure that you don’t want to spend hours in the kitchen after you ran a couple of miles. I know all I want is to relax. So preparing your meal in the oven seems to be a good option. You just wrap it in parchment paper and leave the oven does its job.

If you want to cut the fat, remove the mozzarella. Although adding the cheese does not make the meal heavy at all, especially if you choose for half-skimmed version.


Ingredients

  • 250 g turkey fillet
  • 140 g buffalo mozzarella, sliced
  • 30 g sun-dried tomatoes, chopped
  • 50 g black olives, pitted
  • 2 tbsp dried oregano or Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper (I always use white pepper)
  • 2 tbsp mild olive oil


Preparation

Preheat the oven to 180 degrees C/360 degrees F.

Season each fillet with salt and pepper. Place on a sheet of parchment paper or aluminum foil. Sprinkle the oregano/Italian seasoning on top.

Drain the mozzarella from the water, if any. Slice it in six slices. Place three slices on top of each fillet.

Chop the sun-fried tomatoes. Place on top of the mozzarella. Divide the olives between both fillets.

Make an envelope from the parchment paper/foil. Make sure that it’s completely closed and there are no holes.

Bake in the preheated oven for 25 to 30 min. Remove from the oven and open the envelopes. Be careful not to  burn yourself, the steam is hot. Serve with fresh green salad. Enjoy!
