Black quinoa-edamame patties

4-6 servings; 15 min preparation; 30 min cooking time.

This colorful recipe is vegetarian, low on calories and full of valuable nutrients. You can make a vegetarian burger in minutes. 

It’s a very light summary dish that us full of flavor. And let’s not forget that is super healthy as well.


Ingredients

  • 80 g uncooked black quinoa
  • 175 g edamame
  • 80 g carrot, shredded
  • 2 tsp breadcrumbs
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp white pepper
  • 1 egg


Preparation

Cook the quinoa according to the instructions of the package. Drain from the extra water, if any. Set aside with a lid on.

Mix the rest of the ingredients together. Transfer to a food processor and blend until smooth, but not too processed. It’s okay, if there are small chunks of edamame, they give a bite.

Transfer to a bowl. Add the cooked quinoa and mix well.  Form balls from the mixture as big as you want.

Cook them as you want: Heat oil in a pan and cook the patties on each side until golden. Or preheat the oven to 200 degrees C/400 degrees F and cook them for 20 min. Or use an AirFryer for 15 min at 200 degrees.

Serve the patties with delicious hummus. Enjoy!
