The nice weather outside is asking for a fresh and light lunch, so I decided to make a summer salad. This spinach salad with pear, Serrano ham and toasted nuts is not only very healthy, but it’s also a perfect combination of flavors.
The honey-lime dressing complements the salty ham and sweet pear perfectly. The sour lime just makes the salad complete and lift it. Use any kind of nuts you prefer. I added a mix of nuts and toasted them just to enhance the flavors and release the aromas, but you can use raw nuts as well.
Ingredients:
- 400 g baby spinach
- 100 Serrano ham
- 1 pear, peeled and cubed
- 60 g mixed nuts (walnuts, hazelnuts, almonds)
for the honey-lime dressing:
- 3 tbsp extra virgin olive oil
- 1 lime, juice
- 1/2 tsp acacia honey
- 1/4 tsp salt
- 1/4 tsp white pepper
Preparation
Remove the stems from the spinach leaves. Wash them well and transfer to a sheet of kitchen paper or dry them in a salad centrifuge. Transfer to a salad bowl.
Peel the pear. Cut in four and remove the core and seeds. Cut the pear in thin slices or cubes and add to the salad.
Cut the Serrano ham in small ribbons and put on top of the spinach leaves.
Heat a dry cooking pan over medium heat. Toast the nuts of your choice until golden. Be careful not to burn them.
Dressing: Mix the ingredients for the dressing until smooth using a fork or a blender. Adjust the ratio according to your taste. Pour the dressing over the salad. Enjoy!
