Healthy Sunday: Italian salad

It’s Healthy Sunday again! Is there a better way to celebrate healthy food, than a colorful salad. Today I chose Italian flavors again. 

Ingredients

  • 100 g small mozzarella bolls
  • 50 g rucola
  • 100 g black olives, petted and halved
  • 1 yellow bell pepper, big brunoise
  • 100 g cherry tomatoes
  • 1/2 avocado, in cubes

for the dressing:

  • 2 tbsp extra virgin olive oil
  • 2 tsp white wine vinegar
  • 1 tbsp fresh cilantro, minced
  • 1/4 tsp salt


Preparation

Prepare the dressing first. Mix all ingredients together. Mince the cilantro very fine. Add it to the dressing. Glaze a salad bowl with the dressing.

Drain the mozzarella from the extra water and set aside. Cut the olives in half. Cut the bell pepper in big brunoise or cubes. Cut the cherry tomatoes in half. Peel the avocado, remove the seed and cut it in small cubes.

Mix all vegetables together in the bowl with the dressing. Add the rucola and mozzarella. Toss until everything is completely covered with the dressing. Enjoy!
