Healthy omelette wrap (on the go)

Preparing lunch on-the-go could be challenging sometimes, because it has to be compact enough, it has to hold till the next day and it has to be suitable to take in a container. You don’t want any liquid spills in your bag. I’m always searching for healthy recipes that could fit in a lunch box, so I prepared an easy and fast recipe for those occasions.

You can use every sort of filling you prefer. The good news is that there are endless combinations according to your taste. Think that you are using a tortilla wrap, but it’s completely gluten-free. You can even make it vegetarian. Just check what you have in the fridge, slice it thinly and wrap it. Just keep it simple and healthy.

Because the omelette contains just one egg, you can make two wraps for you. It will suit your daily egg intake. If you are really worried about too much cholesterol in your diet, remove the egg yolks and beat two egg whites per wrap. It would even  be a healthier version of this recipe.

This wrap is not just a good lunch on the go. You can make this recipe as a snack, lunch at home or even light dinner. For sure it will taste good and it will be healthy and good for your diet.

Ingredients

  • 1 egg (or 2 egg whites), beaten
  • 1 tsp cream cheese with herbs
  • 1/4 tsp paprika powder
  • 1/4 tsp white pepper
  • 1/4 tsp salt
  • 1 tbsp oil

for the filling (optional):

  • 2 pieces chicken fillet
  • 2 leaves lettuce
  • 1/2 tsp hummus or cream cheese
  • 1/4 avocado
  • 2 slices tomato (optional)


Preparation

Heat oil in a cooking or pancakes pan. Beat the egg. Add the cream cheese and whisk until smooth. Add the seasonings.

When the pan is hot, pour the filling. Cover the whole bottom of the pan as you make pancakes. Cook for 2 to 3 min until golden, then turn the omlette and cook on the other side. Be careful not to make holes, the omlette will be very thin.

Take the omelette from the heat and put on a piece of kitchen paper to absorb the extra vet.

Filling: Cover the whole omelette with hummus or cream cheese. I used tomato hummus for this recipe. Cover one half with lettuce, chicken fillet and slices of avocado. Flip the other half over so that you have a half circle, and roll. Enjoy!
