Superfood weekend part III – Tilapia with tomato-chives topping

2 servings; 10 min preparation; 20 min cooking time.

A healthy meal full with nutrients and “super” elements. In under 30 min you will have a comforting and yet light meal that is full of vitamins and minerals. This delicious meal contains a relatively low amount of calories, but it provides complex flavor. The taste and flavor of this dish will surely satisfy even a very picky person.

Ingredients

  • 2 white fish fillets (about 300 g)
  • 2 tomatoes
  • 2 tbsp Boursin cuicine with herbs, or any soft cheese 55%
  • 10 g fresh chives, minced fine
  • 2 tbsp grated cheese

 

Preparation

Preheat the oven to 200 degrees C/390 degrees F.

Lay the fish fillets in an oven dish.You can use any white fish of your choice, for example tilapia, cod or halibut. I used tilapia this time. Check the fillets for any bones. Season the fish with salt and pepper.l

Cover each filet with 1 tbsp Boursin cuisine. If you can’t find Boursin in your store, use any soft cheese 55% with herbs and/or garlic that you can find.

Cut the tomatoes in half and remove the seeds. Mince the tomatoes. Put the pieces on top of the filets (about 1 tomato per filet). Cover with fine chopped chives. Finish with 1 tbsp grated cheese per filet. You can use any parmesan, pecorino or any other cheese of your choice.

Bake in the preheated oven for 20 min. Enjoy!
