Superfood weekend part II – Spinach salad with strawberries

If you are wondering what to accompany your lunch with, but you don’t want to make a standard side-dish or salad, you might find your solution here. You can combine it with other dishes or just eat it by itself for lunch.

Everything in this salad screams superfood. Spinach will increase your energy and it’s full of vitamin K, C, A and magnesium. These nutrients will improve your blood quality. Blueberries and strawberries are carriers of anti-oxidants. Avocado contains healthy fats and vitamin K, C, B5 and B6. All in all this “super” salad is a nutritional bomb that will make you healthy and happy!

Ingredients

  • 300 g baby spinach
  • 1 ripe avocado
  • 150 g ripe strawberries
  • 40 g blueberries
  • 1 tbsp chopped walnuts
  • 2 tbsp extra virgin olive
  • 1 tbsp white wine vinegar
  • 1 ts honey
  • 1/2 ts paprika powder
  • salt

 

Preparation

Make the dressing by mixing all the liquid ingredients with the paprika and salt.

If you don’t have baby spinach, cut the leaves of normal spinach in half. Cut the avocado in small pieces, the strawberries – in slices. Chop the walnuts roughly.

In a big bowl mix the spinach with the avocado. Toss the berries and nuts on top and pour the dressing. Enjoy your delicious and colourful meal!
