Pasta does not always need to be served with heavy sauces and a lot of cheese. Sometimes we can celebrate the pure taste of the raw vegetables. With just a few fresh ingredients, you can create a delicious pasta salad.
These cold sauce goes well with any kind of pasta. Choose the one kind you like the most or make your own pasta. In each case, the sauce will be the star of the dish. It so fresh, full of flavor and healthy.
And if you really cannot imagine eating pasta without your favorite cheese, then sprinkle a little bit of Parmesan cheese on top or add small pieces of mozzarella.
Ingredients
- 100 g pasta of your choice ( I used gluten-free)
for the sauce:
- 200 g cherry tomatoes
- 200 g roasted red bell pepper
- 10 g fresh parsley
- 10 g fresh basil
- 1/2 tsp garlic powder
- 1/2 tsp white pepper
- 1/2 tsp salt
- 1 tsp olive oil
- 1/2 avocado, chopped
- 1 tbsp Parmesan cheese (optional)
Preparation
Prepare the pasta according to the instruction on the package. Don’t boil it too long, it has to be just al dente. Drain from the water, pour a little bit of olive oil so that it doesn’t stick together and set aside.
Sauce: Mix all ingredients together in a blender. Blend until smooth. Add the seasonings. Adjust the seasoning if needed.
Mix the sauce and the cooked pasta in a bowl. Add halved cherry tomatoes. Add small cubes avocado. Garnish with fresh basil. Enjoy!
