This salad is a great way to celebrate vegan products. It’s a combination of vegetables, fruit and healthy vegetable protein. The salad is colorful and so delicious, but also full of essential nutrients that will boost your health.
Lentils are full of protein, fibers and contain a low amount of fat. They are very beneficial for any weight-loss and low cholesterol diet. Adding hemp seeds increases the amount of vegetable protein in the salad.
Hemp seeds are considered an incredible gift of nature that is one of the healthiest foods in the world. Hemp seeds contain high level of omega 3 and 6 acids, easy to absorb protein and vitamin E. Those seeds are suitable for people with allergies and any food intolerance.
This combination is powerful and super healthy as it is, but adding blueberries makes it really complete. They contain antioxidants that will keep you young and healthy. Besides that the fruit gives a little sweetness to the salad, which balances flavors perfectly.
- 100 g red lentils
- 100 g cherry tomatoes, halved
- 100 g mixed salad of your choice
- 1 baby cucumber, sliced
- 2 tbsp hemp seeds
- 1 tbsp chia seeds
- 1/2 nectarine, sliced
- 50 g blueberries
- 1 tsp pine nuts
for the dressing:
- 2 tbsp vegan yoghurt
- 1 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar or lime juice
- 1 tsp turmeric powder
- 1/2 tsp salt
Cook the lentils according to the instructions on the package. It should take about 8 to 10 min. Drain and let cool a little.
Wash and slice the cucumber. Cut the tomatoes in half.
In a bowl mix the cooked lentils, mixed salad, tomatoes and cucumber. Toss blueberries on top. Cut the nectarine in cubes or thin slices. Add to the salad.
Sprinkle chia, pine nuts and hemp seeds on top. Mix the ingredients together. Mix all ingredients for the dressing in a glass and pour over the salad. Enjoy!
