Bacalhau à Brás

Along with pastel de nata, the small custard tarts, this is one of the most iconic dishes in the Portuguese cuisine. Every time when I go to Portugal I order it, because it’s really delicious. Since I love this dish so much, I decided to learn how to make it at home. 

As most of the Portuguese dishes, it’s relatively simple to make, but it’s full of flavor. Once you learn how to prepare it, it will become a frequent part of your menu.

Ingredients

  • 1 onion, thin wedges
  • 3 cloves garlic, minced
  • 400-500 g cod, fillet
  • 400 g fried potatoes chips (palha) or potatoes julienned and fried
  • 5 eggs, beaten
  • 100 g black olives, chopped
  • 4 tbsp parsley, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • oil for frying (optional)


Preparation

Bring a pan with water to the boil. Add the fish fillets and boil for 10 min. Remove from the water and divide in small pieces.

If you don’t have any store-bought fried potato chips (palha), peel and cut the potatoes in very thin juliennes. They should be 3 mm thin. Put the cut juliennes in ice water for a couple of minutes. Take them from the water and fry them until golden brown. Bring to a kitchen paper to absorb the extra oil.

Heat oil in a big cooking pan over medium heat. Sauté the onions until soft and transparent. Add the garlic. Sauté for 2 more minutes. Add the small cod pieces. Fry for 4 more minutes.

Add the fried potatoes. Stir for 3-4 minutes. Add the beaten eggs, chopped olives and parsley. Stir until the eggs are fully cooked. Enjoy!

  1. I am in love with this particular version of bacalhau. Brings back memories of Bairro Alto and digging into this with some gusto 🙂 However does making it with unsalted/dried cod turn out okay?

    1. Me too! It’s funny that we think about the same 😉 I absolutely love Lisbon! I chose unsalted cod so that it’s easy to reproduce. The taste was very similar to the one I tried in Portugal.
