Sunday afternoon is the best time to invite friends over for coffee especially with the nice weather outside. These muffins will make your Sunday brunch complete and so delicious.
The muffins take only about half an hour to make, which will give you time to prepare other treats for the table. Make the muffins short before your guest arrive and they will notice the fantastic smell from the door. Your whole house will have this fresh blueberry bake smell, which is fantastic.
- 2 eggs
- 240 ml plain Greek yoghurt
- 80 ml mild olive oil (or other vegetable oil of your choice)
- 1 tsp vanilla extract
- 260 g all-purpose flour
- 100 g sugar
- 3 tbsp chia seeds
- 1 1/4 tsp baking powder
- 1/4 tsp salt
- 240 g blueberries
Preheat the oven to 190 degrees C/370 degrees F. Grease a muffin form or use paper muffin covers.
Mix the flour, chia seeds, baking powder and salt together in a big bowl. In another bowl beat the eggs. Add yoghurt, oil and vanilla extract. Whisk well. Add the sugar and continue whisking until fully incorporated.
Add the wet ingredients to the dry ones. Use a spatula to mix everything together. Add the blueberries. Divide the mixture between the muffin forms.Put 2-3 blueberries on top so that you can show off the fresh fruit.
Bake in the preheated oven for 15 to 20 min or until the toothpick come clean. Enjoy!
