I normally make chicken buritos, but this tine I decided to make something different using beef. In this case you can use ground beef or beef pieces.
Ingredients
- 400 g beef, chopped in small pieces
- 1 sweet onion
- 3 cloves garlic
- 50 g sweet corn
- 300 g kinley beans
- 1 red bell pepper, chopped
- 1 avocado, chopped
- 3 tbsp crème fraîche
- 1/2 cup cilantro, chopped
- 1 tsp ground coriander
- 1 tsp paprika powder
- 1 tsp ground
- 1/2 tsp cayenne pepper
- 2 tbsp mild olive oil
- 4 tortilla wraps
- 50 g ground cheese
Preparation
Heat the olive oil in a big skillet over a medium heat. Fry the onion until transparant. Add the garlic and fry for a couple of minutes. Add the beef pieces. Stir until the meat gets color on each side.
Chop the bell pepper fine and add to the skillet. Add the corn, beans, crème fraîche and the dry seasoning. Let it simmer until the bell pepper becomes softer.
At the end add the chopped avocado and chopped fresh cilantro. Stir for a couple more minutes.
Preheat the oven to 210 degrees C/420 degrees F.
Put 2 tbsp of the mixture in the middle of each wrap. Cover with 1 tbsp grated cheese and make a parcel. Be sure that the filling can’t escape from the wrap. Put the wraps with the opening down in an oven proof dish. Cover with greated cheese and bake in the preheated oven for 15-20 min or until the cheese melts.
Serve with fresh green salad or guscamole. Enjoy!
