Baking a cake doesn’t go easier than that. With only few ingredients and no electrical equipment you can make a delicious vegan dessert that everyone will love.
I wanted to make a recipe, inspired by my grandmother walnut cake. As far as I can remember, she made such an easy cake. Unfortunately I couldn’t remember the exact proportions. So I improvised by putting more or less one cup of each main ingredient.
This cake is completely gluten-free, because it’s made with quinoa flour. It’s also made without any eggs or butter, so it’s also completely vegan. The cake that I made wasn’t that sweet, so I increased the amount of jam in the final recipe. It depends on you how sweet you want it to be.
Ingredients
- 140 g quinoa flour
- 250 g orange jam
- 150 g mild olive oil
- 150 g walnuts, chopped
- 2 tsp baking powder
- 1 tsp vanilla
- 1/2 tsp salt
Preparation
Preheat the oven to 200 degrees C/400 degrees F. Cover a small baking form with parchment paper ans set aside.
In a bowl mix flour, salt and baking powder. Add olive oil. Combine together. Add the jam and vanilla. Stir well.
Chop the walnuts roughly. Add the nuts to the mixture. Transfer the mixture to the baking form and bake in the preheated oven for about 35 min.
Take the cake from the oven and let it cool before you cut it. Serve with powder sugar, if you want it to be sweeter. Enjoy!
