Chia seeds are used for centuries by maya and aztecs. They are super good for you, as they are rich of valuable nutrients. Chia seeds contain valuable protein, fibers, calcium and omega-3 acids. Combined with blueberries, this breakfast will give also a lot of antioxidants.
This breakfast could be made completely vegan if you use coconut or almond milk. It is also versatile, because you can add all your favorite fruit or nuts to the basis pudding. Just choose your favorite milk, add chia seeds and natural sweetener as honey or agave syrup and you will have the basis for a great start of your day.
- 150 milk of your choice
- 3 tbsp chia seeds
- 1 tbsp acacia honey
- 1 tsp vanilla essence
- 100 g blueberries
- 1 tbsp shredded coconut
- 2 tsp pistachio, chopped
Mix the milk, chia seeds, honey and vanilla in a jar or small bowl. Whisk the mixture a little bit so that the seeds don’t get lumpy. Add blueberries. Set it in the fridge overnight.
As long as you leave the pudding there, as thick it will become.
Take the pudding from the fridge. Add chopped pistachio, blueberries and shredded coconut on top. Enjoy!
