King’s day muffins

14 servings; 20 min preparation; 30 min cooking.

It’s our national holiday today – King’s day, so as the tradition says, I made something with orange color. I was wondering what I could make that is not typical and expected and I came with the idea for these muffins.

The texture and taste are quite surprising. The cheese and the cumin taste combine well together. All in all, these muffins could be the perfect snack for every occasion.

I used a little bit of orange food coloring to reach the right color. You don’t have to use any, if you try this recipe.


Ingredients

  • 130 g corn flour
  • 90 g all-purpose flour
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder 
  • 1/2 tsp salt 
  • 80 g butter, melted
  • 1 egg, beaten 
  • 150 g milk 
  • 80 g Gouda cheese, grated 
  • 80 g Serrano ham, chopped 
  • 1 tsp cumin seeds 
  • 1/4 tsp white pepper 


Preparation

Preheat the oven to 180 degrees C/360 degrees F. 

Mix the dry ingredients together in a bowl. Season with cumin seeds, white pepper and salt. 

Melt the butter in the microwaves. Beat the egg. Mix the butter, egg and milk. Add to the dry ingredients. Add grated cheese and chopped ham. Stir until smooth. 

Fill in 2/3 of the muffin forms with the mixture. Bake in the preheated oven for 30 min. Let it cool completely  before you try them. Enjoy!

    1. I guess I haven’t mentioned it anywhere. I improvised a lot with the muffins, but they were very nice 🙂
