Sweet potatoes with goat cheese and pomegranate seeds

2 servings; 5 min preparation; 30-40 min cooking time.

This recipe could be considered a side-dish, but I would make it for lunch or as a light dinner. The sweet potatoes are very filling and will keep you satisfied for the day.

I used goat cheese with honey and the dish was a little sweet. If you want to keep it less sweet, choose for plain goat cheese or even cottage cheese. In my opinion the sweetness makes this dish, but this is a matter of taste of course.


Ingredients

  • 2 middle size sweet potatoes
  • 2 tbsp extra virgin olive oil
  • 2 tbsp dried oregano
  • 100 g goat cheese
  • 1 pomegranate
  • 4 tbsp fresh cilantro, chopped
  • white pepper
  • salt


Preparation

Preheat the oven to 200 degrees C/400 degrees F.

Cut the potatoes in half. Leave the skin on. Put them on an oven tray. Drizzle olive oil on top. Divide the oregano between the potatoes. Bake in the preheated oven for 30 to 40 minutes or until they start getting soft.

Remove the seeds from the pomegranate. Chop the cilantro. When the potatoes are almost ready, cover with goat cheese and return the tray for 5 more minutes in the oven. Serve with fresh cilantro and pomegranate seeds. Enjoy!
