Who doesn’t like burgers?! And if you know that they could be healthy as well, you really couldn’t resist. So today I incorporated my favorite flavor of sweet potatoes with black beans and sweet peas and created a healthy and completely vegan recipe for oven-baked burgers.
Ingredients
- 300 g sweet potato (2 medium size)
- 200 g black beans
- 100 g sweet peas, frozen
- 1/2 tsp ground coriander
- 1/2 tsp paprika powder
- 1/2 tsp ground cumin
- 1/2 tsp ground nutmeg
- 1/2 tsp white pepper
- 1/2 tsp salt
- 2 tbsp fresh flat-leaf parsley, minced
- 3 tbsp mild olive oil
Preparation
Preheat the oven to 200 degrees C/400 degrees F.
Peel and cut in cubes the sweet potatoes. Place them on a baking tray and drizzle 1 tbsp olive oil on top. Roast the sweet potatoes for 25 min.
Take the roasted potatoes from the oven and mash them with a fork. Add all dry seasonings. Mix well.
Wash and drain the black beans. Add them to the sweet potatoes. Take the sweet peas from the freezer and wash them under running warm water. Add them to the sweet potatoes.
Mince the parsley very fine. Mix it with the rest of the ingredients. Add the olive oil. Taste the mixture and adjust the seasoning according to your taste.
Preheat the oven to 210 degrees C/410 degrees F. Form burgers from the mixture and place them on a baking tray. Bake them in the preheated oven for 15 min. Enjoy!
