The summer is definitely over, but I’m already starting to miss the light summer flavors and fruit. So I decided to pick maybe the last good sweet strawberries from the store and bake some delicious dessert with them. I came up with the recipe for these yummy strawberry muffins.
I really love muffins, because they are so easy to make. There is not a lot of preparation involved and you can make them in any flavor of our choice. You can use the whole variety of fruit and vegetables to make them as you wish.
Ingredients
- 180 g all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 100 g sugar
- 2 eggs
- 100 g Greek yoghurt
- 80 g vegan butter, melted
- 1 tsp vanilla extract
- 300 g strawberries, chopped
- 1 tsp cornstarch
Preparation
Preheat the oven to 200 degrees C/400 degrees F.
Beat eggs with sugar in a bowl until pale. Add butter, yoghurt and vanilla extract. Whisk well until fully incorporated.
Mix flour, baking powder and salt together. Add the dry ingredients in parts to the egg mixture. Make sure that there are no lumps.
Cut the strawberries in half and then in small pieces. Add 1 tsp cornstarch to the strawberries. Then add the strawberries to the batter.
Pour the batter into the muffin forms. Bake in the preheated oven for 30 min or until the toothpick comes clean. Enjoy!
