Cheesy heart meatballs

6-8 portions; 30 min preparation; 15 min cooking time.

I’m celebrating a milestone today! It’s my 100th post on my blog. My blog has also a little birthday, since it’s three months old already. It’s amazing how fast time goes by and how many people cross your way in such a short amount of time. Thank you all for following my journey, for liking my recipes and leaving comments! You make it all worth it! 

A special day asks for a special recipe! This is my own version of the traditional meatballs. I made them juicy and full of flavor by adding a little bit of lime juice and chili peppers. There is a little kick at the end of the jalapeño.

Depending on the size you are looking for, you can prepare them as a slider, appetizer or main course.

Ingredients

  • 500 g ground beef or mix
  • 1 egg, beaten
  • 2 tbsp black olives, chopped
  • 2 tbsp fresh parsley, minced
  • 1 jalapeño, without seeds and minced
  • 1/2 red chili pepper, without seeds and minced
  • 100 g Gouda or Emmental cheese, cubed
  • 1/2 lime, juice
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp ground coriander
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tsp salt


Preparation

Mince the parsley and the chili peppers. Mix all ingredients besides the cheese in a big bowl. Knead the mixture with your hands for a couple of minutes until everything blends together. Cover the bowl with a plastic foil and set in the fridge for 30 min. This will help to blend all flavors together.

Preheat the oven to 180 degrees C/370 degrees F. Cover a baking tray with a piece of parchment paper or grease it with vegetable oil.

Cut the cheese in cubs of 2×2 cm. Take the mixture from the fridge. Take handful from the mixture and make it flat in your palm. Place a piece of cheese in the middle. Wrap it with the mixture and form a ball. Place on the baking tray. Repeat with the rest of the mixture.

Bake in the preheated oven for about 15 min. Enjoy!
