If you want to enjoy a healthy meal after a busy day at work, but you don’t want to spend hours in the kitchen, this is the perfect recipe for you. It takes literally 10 min to make, the rest is just waiting for the oven to do its job. The cilantro-mint dressing that goes with it, is just amazing! You can combine it with variety of dishes, even use it as a salad dressing. Trust me on this, you are going to love it!
Ingredients
- 400 g salmon
- 1/2 cup fresh cilantro
- 2 tbsp fresh mint
- 2 small shallots
- 2 garlic cloves
- 1 lime (the zest and the juice)
- 10 g pine nuts
- 1 ts honey
- 1 tbsp olive oil
- salt and pepper
- baking paper or foil
Preparation
Preheat your oven to 210 degrees C/400 degrees F.
Put all ingredients besides the salmon in a blender and mix well until smooth. If you don’t have a blender, chop the herbs, shalots, garlic and pine nuts fine and mix them with the lime juice, zest and the honey.
Cut the salmon in half and put each piece on a baking paper sheet. Season the salmon with salt and pepper. Put 1 tbsp of the dressing on top of each salmon. Make two envelopes of the paper/foil and make sure that there are no openings so that the steam doesn’t escape. Put the envelopes on a tray in the preheated oven. Leave the salmon for about 20-25 min. Open the envelopes carefully, the steam could be very hot. Combine the salmon with roasted potatoes or fresh salad. Enjoy your meal!
