Beef roulade

2 servings; 10 min preparation; 1 h waiting; 20 min cooking time.

Surprise your family and friends with something easy, but very delicious and pleasing for the eye. This beef dish take literally 30 min to make and it’s the perfect main course for your special occasion.  

If you have the time, marinade the meat overnight in the fridge. It will be much more tender and flavorful. If you have your own favorite marinade, feel free to use it. The goal is to make the meat

Ingredients

marinade

  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 2 garlic cloves, roughly chopped
  • 1/2 tsp ground cumin
  • salt and pepper

 

  • 300 g beef flank steak (two steaks about 150 g each)
  • 50 g soft goat cheese
  • 10 leaves baby spinach
  • 2 tbsp sun-dried tomatoes, chopped
  • 1 tbsp walnuts, chopped (you can use pine nuts as well)
  • 1 tbsp butter
  • 1 tbsp mild olive oil
  • salt and pepper

 

Preparation

Season with salt and pepper on both sides. Cover 1/3 of each steak with spinach leaves. Take the hard parts of the leaves away. Cover the leaves with goat cheese, chopped sun-dried tomatoes and walnuts. Roll the steaks tight and be carefull for the filling not to come out of the sides. Cover the steaks with the marinade and leave it for 1 h in the fridge.

Preheat the oven to 180 degrees C/360 degrees F.

Place the steaks on a chopping board and cover with clean foil. Use a meat hammer to make the steaks as thin as possible. Be careful not to destroy the meat.

Close the openings using tooth sticks or use kitchen twine. Wrap the rolls tight with clean foil and put them in the fridge for 10 min.

Take the rolls from the fridge and remove the clean foil. Heat olive oil in a pan and add the butter. Sear the rolls in a hot pan on medium heat. Use a spoon to pour butter on top of the rolls. Rotate them so that they get a brown color on each side.

Transfer the rolls to an oven tray and pour the butter on top. Bake in the preheated oven for 10 min. You can cut the time depending to your preference of meat cook. Serve with fresh green salad. Enjoy!
