Zucchini vegetarian patties

Try these super easy, colorful and delicious zucchini vegetarian patties. Your family and especially your kids will love them. Since they are oven-baked, there is no additional fat added to the recipe, so you can enjoy a healthy meal.

Ingredients

  • 1 big zucchini, shredded
  • 100 g grated Gouda cheese
  • 100 g corn
  • 100 g peas, fresh or frozen
  • 2 tbsp dried parsley or dill
  • 2 eggs
  • 4 tbsp breadcrumbs
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground coriander
  • 1/2 tsp garlic powder
  • 1/2 tsp white pepper
  • 1/2 tsp salt

Preparation

Preheat the oven to 200 degrees C/400 degrees F.

Shred the zucchini and squeeze all water out of it. Make sure that it’s as dry as possible. Transfer to a bowl.

Wash the peas under warm water until they defrost. Add the peas and corn to the zucchini. Add breadcrumbs and stir well.

Season with salt and pepper. Add all additional dry ingredients and the parsley/dill.

Make small balls from the mixture and place them on a baking tray, covered with parchment paper. Press the balls so that they are flat.

Bake them in the preheated oven for 40 min. Serve with homemade Avocado-cilantro hummus or Roasted egg-plant dip. Enjoy!
