Scotch egg is typical English dish that includes hard-boiled eggs wrapped in sausage. The origin of the dish is unclear, but it’s very probable that it’s a version of the Indian Nargisi kofta. I decided not to coat it in sausage meat, but to use ground beef and use similar to sausages seasonings.
There are many ways you can prepare the Scotch egg. You can cook it in a pan, fry in the AirFryer or bake the Scotch eggs in the oven. This is entirely up to you. If you choose to fry them, you may coat the eggs in egg-breadcrumbs mixture along with the Parmesan cheese. Then the result will be soft inside and crunchy outside.
- 500 g ground beef
- 1 egg, beaten
- 2 tbsp black olives, pitted and minced
- 1 jalapeño, without seeds, minced
- 1 red chili pepper, without seeds, minced
- 2 tbsp lime juice
- 1 1/2 tsp ground coriander
- 1 1/2 tsp ground cumin
- 1/2 tsp black pepper
- 1 tbsp salt
for the coating:
- 1 cup grated Parmesan cheese
- 1/2 cup plain flour
- 1 cup breadcrumbs
- 1 egg
- 4 eggs, soft-boiled
Bring a small pan with water and the eggs to the boil. Boil the eggs for 2,5 min. Remove from the pan and put the eggs in a bowl with cold water. This will stop the cooking process. Remove the shells very carefully, the eggs are very soft and can break.
Preheat the oven to 200 degrees C/390 degrees F.
Mix all seasonings, chili pepper, jalapeño and the beaten egg with the beef. Add the lime juice. Use your hands to knead the mixture.
Take a handful of the mixture and make a boll. Try to flatten it and make it thin. Place one egg in the middle and wrap with the beef mixture. Form a meatball. If you roll the egg in flour first, the meat mixture will stick better. Roll the meatball in flour and beaten egg. Roll in a mixture of grated Parmesan cheese and breadcrumbs. Put on a baking tray. Repeat with the rest of the eggs.
Bake for 15 min in the preheated oven. Serve with roasted Parmesan asparagus. Enjoy!
