If you follow my posts, you have probably noticed that I cook fish very often. In fact, I try to include fish on my menu at least twice a week. I love all kinds of fish and all ways to prepare it. All kind of fish are good for you, so you can’t go wrong with your choice.
There are so many reasons to include fish in your diet. They contain high-quality proteins and fundamental Omega-3 fatty acids that are very good for your cardio-vascular system and your brain. The other crucial element that fish contains is Vitamin D. With other words, the nutrients of the fish could prevent strokes and heart-attacks and help your body develop and grow. And probably few people know that Omega-3 acids help you against depression, which is one of the biggest issues nowadays.
From all fish salmon is one of the most beneficial for you, since it’s considered a fatty fish. Scientists say that fattier fish is better for you. So don’t forget to include salmon on your menu at least once a week. It will keep you happy and healthy.
- 600 g fresh salmon
- 1 lemon, zest and juice
- 2 tbsp Italian seasoning
- 2 tbsp extra virgin olive oil
- 100 g soft goat cheese
- 1/2 tsp chili or cayenne pepper
- 1/2 tsp white pepper
- 1/2 tsp salt
for the potato mash
- 1 cup boiled potatoes without skin
- 1/2 cup warm milk
- 1 tbsp Boursin Cuisine or other cream cheese with herbs
- 1/2 tsp ground nutmeg
- salt and pepper
Preheat the oven to 220 degrees C/330 degrees F.
Mix the lemon zest, juice and herbs in a bowl. Add white pepper, cayenne pepper and salt. Add olive oil and mix together.
Fish: Dip the fish in the marinade for a couple of minutes. Transfer the fish to an oven proof dish. Pour the rest of the marinade on top. Slice thin pieces of the goat cheese and cover the fish.
Potato mash: Boil the potatoes until soft. When the potatoes are ready, transfer to a food processor. Add the warm milk, Boursin and seasoning. Process until smooth.
Bake in the preheated oven for 20 min or until the cheese gets some color. Serve with mashed potatoes and fresh salad. Enjoy!
