Superfood weekend part I – Banana oat pancakes with blueberries

2 servings (about 8 small pancakes); 5 min preparation time; 15 min waiting; 10 min cooking.

What a better start of your superfood weekend than making fluffy pancakes for breakfast? These flavour explosions are completely sugar- and flour-free amd combine perfectly with fresh berries.

Blueberries are considered a superfood, because of their nutritional value. They are full of anti-oxidants, fibers and vitamin K and C. Their natural sweetness will make your pancakes so delicious that you will not need any additional sugar. This is a “super” sweet begin of your day. Enjoy!

Ingredients

  • 2 ripe bananas
  • 1 cup oats, blend
  • 2 eggs
  • 1 ts vanilla extract
  • 100 ml milk
  • 1/2 ts baking powder
  • 1/2 ts cinnamon
  • 1/2 ts salt
  • 125 g fresh blue berries
  • 1/2 ts nutmeg (optional)

Preparation

Put all ingredients besides the blue berries in a blender and mix until smooth. Leave the mix side for 15 min to thicken.

Use a non-stick pan on a medium heat. Use 1 1/2 tbsp oc the batter for each pancake. Put a couple of blueberries on top, then turn. It takes 5 min on each side to prepare. Don’t worry if the pancakes get a little dark, this is normal because of the blueberries’ juice. Serve with fresh berries and honey. Enjoy!
